Our process is a modified version of an ancient winemaking technique used by the ancient Greeks and Romans to produce low-alcohol wines that were enjoyed by all. From the aristocrats to the soldiers to the “hoi polloi”, the common people of those civilisations.
The ancients added water to the remnants of grapes (pomace) that had already been pressed and juiced for wine. The fermentation of this mixture produced a wine with a naturally low alcohol content.
Unlike the wine of our ancestors,
N.O.W. is not produced with just any water, but with water extracted from grape juice.
This is the grapes’ own water and it is naturally infused with varietal aromas. This isn’t watering down, it’s watering up!

N.O.W. IS GREEN
We have found a novel way to make use of this wonderful grape water that is typically discarded by juice producers as waste. What a waste!
Moreover, the vast majority of nolos are produced by removing alcohol industrially.
This process not only depletes flavour & aromas but it is also extremely energy and water intensive. A very unsustainable process that we very happily (and very high-and-mightily) do not need!
By not using this method we safeguard our quality while keeping our energy and water consumption in serious check.
