Our innovative process is based entirely on grapes and is a shining example of circular economy as we utilise every last drop of grape essence, which in any other case would go to waste. Most low or no alcohol wines are made by mechanically removing alcohol.
This is an extremely unsustainable process, which we are very happy not to partake in.
Our method is a modified version of an ancient Greek & Roman wine-making technique, which used added water to achieve a low alcohol content. They made this wine for the entertainment of slaves! However, unline our ancestors, we have no need for added water, just the grapes’ own water! We also don't have slaves. Or even interns. All in all, our
process is sustainable (and humanitarian) in a way that is revolutionary in the beverage industry.

We had begun experimenting with ideas for a new know-how, for a more “elegant” wine.
That is, with lower alcohol, but with the desired recognizability of aromas, taste & duration like a conventional wine.
So here is the question,
-Could we approach all these features, removing most of the alcohol?
And the day comes when we achieve what we thought was impossible...
It trampled on the prejudices we had as true alcohol lovers & forced us to confess the truth to ourselves.
